Anyone ever eaten them?
A few years ago I was buying eggs and chicks from the site known as eggbid.com (it isn't a site any longer) and ran across a lady from the midwest who made and sold pickled Quail eggs.....
She had a sweet flavored pickling brine that you could tell was made from Apple Cider Vinager and had mixed in with it, Dill, Mustard Seeds and Chopped Onions... the jars were the little canning jars and only held 12 quail eggs and she sold them on the site for $1.00 a jar plus shipping.
Since then I've wanted to try making my own but do not have a recipe to go by but have found a guy who raises quail and said he would sell me eggs from time to time!
Does anyone think a regular sweet Red Beet colored pickling brine would work?

I'm sure it would work woody...just a matter of how sweet or how tart you want them to be. I like to use the beet juice when I make pickled eggs, just to give it a little color. I guess they would pickle a little faster as well, given the size difference.
