hey hey, darko ~ i'm very glad that you enjoyed this soup! it's definitely a good one as-is - i haven't made it recently, but i plan on seeing if i can make it even just a little better, using some of daikon's and margi's suggestions above. our ham bone from christmas was "stolen," by the dog, so i wasn't able to make it like i planned, but i will sooner or later.

Please do place a thoroughly washed stone in the bottom of each bowl for Good Luck !
It shall bring quite an interesting table discussion ( especially for Roger ) ( see Portuguese Stone Soup with red kidney beans ) !

December 29TH, 2017 Ron, As I stated in an email to you, the soup is fantastic and though there are a couple of nuances and substitutions required by some one creating this dish, or Caldo Gallego, the Galician Versión, it is amazingly outstanding .. Enjoy .. It looks sensational .. Also in tribute to your late friend, I would re-name the Soup: John´s Portuguese Soup for example. All my best for a very Happy New Year .. This is a peasant dish and Kiss = keep it simply simple .. No rice !! Potatoes and one of the following, Swiss chard, kale or spinach .. But not rice !! The Chard, kale or spinach replaces the Indigenious Grelos .. One can also use beet root top leaves or carrot top leaves .. They were used in peasant stews .. Nothing was thrown away .. All was used .. Happy New Year !!! |

We made this soup for New Year's Eve and it was simply outstanding. We used leftover ham from Christmas supper and prepared it pretty much according to my friend's original recipe, which is posted just below the opening post of this thread; the only real difference is that we omitted the rice and added some winter vegetables (celery and carrots). I did think to add some sort of cabbage or perhaps spinach, but our local grocery had none at the time.
Using that recipe, we pretty well filled my 6.5-quart enameled cast iron Dutch oven, so we had plenty for lunch the next day, as well; as predicted, it was even better, then. I took my time making this soup, and tried to do my best preparing the indgredinets and layering the flavours. Everything about the soup spoke of good eating and comfort during a very cold spell that we were experiencing in north-central Montana. It was truly excellent to be experiencing this soup again, and it was a fitting tribute to my friend, who passed away earlier this year as a result of a motorcycle accident. I encourage all to try it, and you will not be disappointed. |

Tas, I have the beans .. / Alubias blancas = navy beans or northern White beans ) .. I need to get a Lacon ( Smoked Porc ) Hock or Bone .. The veggies as well and the Grelos .. I will follow the récipe but only adding Galician Potatoes and a tiny amount of Grelos, an indigenious Galician Green similar to a beetroot top or a carrot top but less bitter .. I have some fotos to post but need to reduce them !!! All my best !!! Shall do this tomorrow .. Beans will soak tonite .. The 6th is Paella Marinara for the Epiphany or what we call The 3 Kings .. ( Los Reyes ) .. |
