FAVA E FUNCHO = FAVA BEANS AND FENNEL

Estremadura is the coast región which includes the City Lisbon, the national capital of Portugal. Cosmopolitan and sophisticated, Lisbon has had Access to all the dishes from former colonies, Africa, South America, Latin America and Goa, India.

With Venecia, the main port between Portugal and the east, this combination is quite common throughout the year.

RECIPE

1 cup shelled fava beans
2 fennel bulbs, including the Young fronds
1 / 4 cup Extra virgin olive oil
1 thick slice of bacon or ham finely chopped ( Optional )
1 large bunch of scallions, trimmed and chopped
a handful of fresh dill

4 slices of bread to serve with


1 / Heat the olive oil in a shallow heavy pan and add the ham or bacon, the scallions and stir over the heat for a few minutes, and then add the vegetables, except for the fennel fronds.

2 / Now season, with salt and black pepper freshly grinded to taste and bring to simmer . low to médium boil

3 / Cover loosely, turn down heat to slow low flame and simmer gently for 40 minutes

4 / Add a Little wáter as needed

5 / Let the concoction bubble up to thicken the sauce and then stir in the chopped fennel fronds or dill

6 / spoon it over slices of oven warm bread or serve with bread on side for dipping
