This is a great recipe from the famous "Keo's Thai Cuisisne" Photo also coutesy of Keo
 
 
Satay on Skewers
 
1 pound boneless chicken, beef or pork
3 Tbsp vegetable oil
1 stalk fresh lemongrass
3 cloves garlic, peeled
1/2 tsp finely chopped thai bird chilis
1 Tbsp curry powder
1 tsp honey
1 tsp fish sauce
bamboo skewers soaked in water
Satay Sauce
Cucumber Sauce
 
1. Cut meat thinly into 2 inch long strips.
 
2. Put all remaining ingredients in food processor and blend until smooth.
 
3. Place meat in ziplock bag and pour marinade over. Refrigerate and marinate at least 2 hours.
 
4. Thread meat onto skewers and grill over moderate heat until done, turning often.
 
5. Serve with Satay Sauce and Cucumber sauce.
