Marinade 1/2 cup lime juice 1 TBL chopped cilantro 2 TBL pepper jelly 1/2 cup Tequila 1 tsp salt 1 tsp cholula sauce (a mild hot sauce) Mix and refrigerate
Glaze 1 cup red pepper jelly 1/4 cup rice vinegar Heat vinegar and stir in jelly reduce to a glaze and use immediately
Now for the goodies 2# peeled and deveined shrimp - tail on skewer the shrimp with bamboo skewers that have been soaked in water Then toss the shrimp with about a cup of the marinade and less sit for 15 minutes or so skewer the shrimp and brush with olive oil bbq over medium heat brush with the glaze and garnish with cilantro
