fry's lite rye
add to bread machine in order( for those who make yeast bread at home make like a normal loaf of white bread)
2 tbs sugar
1 1/2 tsp salt
1 level tbs powdered milk
1 cup + 2 tbs warm water
1 tbs margarine
2 cups white flour
1 cup rye flour
1 packet fast rise yeast
( again red star works best for me or for this one i sometimes use 2 1/2 tsp flieschmann's bread machine yeast)
set timer to standard white loaf ( i prefer a darker chewy crust so i pick standard dark crust appox 3 hours 10 minutes-my old machine was 2 hrs 50 minutes ) when done remove from pan and let cool for appox 20 minutes before slicing ( i cheat and put it in the fridge for 10 if i'm being driven crazy from the smell of baking bread lolz )

even my dog goes nutz when it's almost done lolz it's a good time to be out in the shop working cuz the aroma does indeed build a healthy appetite ! when i lived in cali there was a trendy bakeshop a couple blocks away ... i think i was always hungry ( and they made some of the best sourdough i ever ate !! ) good dark rye is easy to find but lite rye is harder ( at least around here ) and in the heart of wheat country how could i not like bread ? it's light enough to toast and it goes great with most things including some one wouldnt think rye goes with , the 2-1 ratio of wheat to rye is about as far as one can push it without having to resort to the "whole grain"setting on most bread machines(that adds about an hour to the bake time btw ) i also used the basic recipe to make a lite rye raisin bread that actually needs no butter or jam to be excellent
