GREEK STYLE HUMMUS ( CHICKPEA TAHINE PASTE SESAME DIP)
 
Hummus is one of the most popular Middle Eastern, Persian Gulf, Eastern Mediterranean and Greek Meze, appetiser made from the simple Chick pea.
 
Here is our Greek Style Homemade Recipe ( for the homemade Pita ):
 
1) chickpeas 225 grams - soaked overnight in water with salt ( one can use canned or jar beans, I prefer not to )
 
2) the juice of 2 fresh lemons
 
3) 150 ml  Sesame Paste Tahine and a pinch of cumin powder
 
4) 3 garlic cloves smashed and pounded in mortar with pestle
 
5) extra virgin olive oil ( 1 1/2 teaspoons per person )   and salt and pepper
to taste
 
6) a pinch of each:  smoked piquant and smoked sweet paprika
 
7) a healthy pinch of: minced fresh parsley or cilantro or mint - your choice
 
8) Pita warmed in oven
 
Instructions:
 
a) After soaking all night, drain the beans and simmer until tender in water just to cover and salt
about 2 hours
b) Strain the beans and put them in a food processor or mix electrically to coarse thick paste 
c) add the sesame tahine paste, salt, pepper, cumin, lemon juice,  
the smashed garlic cloves and the olive oil - very very slowly
d) then you shall have a coarse yet smooth thick dip
e) place on serving platter and dent the centre with a " well "
f) with this well, place a little of the extra virgin olive oil and sprinkle with the two types of smoked paprika and sprinkle minced parsley
 
 
 
 
 
 
SERVE WITH: OVEN WARM PITA, WINE OF CHOICE and BLACK OLIVES ( Kalamata if possible )
*** a nice crisp pale blonde light textured Beer could work here too ...

This is delicious... Please re-read, the amounts of the ingredients are listed... Make a well in the centre of the hummus once the purée of chickpeas and garlic etcetra are well combined in FP ---
 
I use a bunch, handful of minced fresh parsley, 2 tblsp Evoo and sprinkle to taste LaVera pimentón smoked cayenne paprika
 
Enjoy and have nice wkend and HAPPY FATHER´S DAY.

thanks, margi - i guess the amount of olive oil is what i was asking about, but re-reading, it makes sense to add until the desired consistency is reached - thanks!
