This stuff, made from Seville oranges, is wonderful, and very useful for nearly any Latin American cooking. It is totally unavailable where I live, but a couple of years ago, a friend sent some to me:
 
 
I was able to try it for some wonderful pork barbecue:

And have since looked for an opportunity to acquire more.
 
I think I struck gold today!

the product description states that it is made from Seville oranges, so it is the real deal ~ perfect for what I am looking for. I've asked the beautiful Mrs. Tas to order 3 or 4 bottles of it, since it is so reasonably-priced, and we will see how it goes ~

i ordered some from badia (pictured above) and also some from goya:
 
 
 
we'll see how they work with my next pork barbecue, which will probably be modeled after a wonderful yucatan pork barbecue, similar to cochinita pibil, which utilizes mayan culinary ideas and was featured here a couple of years ago:

Woo Hoo!!! Got lucky and found a local store that just started carrying the Goya. I was there a few weeks ago getting some Anatto seed and they had nothing. Earlier today I stopped to get more and saw a new area full of various mexican items. He just started carrying it a few days ago.

this is really good stuff, darko, and i am willing to bet you will find some great uses for it. pork is what comes first to my mind, but fish, chicken and probably even beef could benefit, i am sure!

Tas: In Spain, one of the most historic dishes employing Seville Oranges is Perdices al Naranjas Sevillanas, partridges with seville oranges. If you would like me to post recipe, pls. let me know. Margi. Could be prepared with chicken or other feathered game or duck.

Tas. This could be overwhelming for delicate white fish varieties. Perhaps in a ceviche it might work. Though feathered game or duck & pork are a better match. Margi

I'm thinking of trying to make Pernil. (My parents gave me a multicooker device for Christmas that I hope will let me roast things, but I left it at their house, so it'll have to wait until I get it back.)

Perníl pork shoulder shall work wonderfully with Naranja Agría Seasoning Marinade.
 
Tas ( Ron ) has prepared a wonderful recipe using NA RAN HA ( LETTER JOTA " J " IS AN " H " IN SPANISH )  AH GREE AH.

Just bumping this with new info.

Naranja Agria is, of course, best if you can obtain it. If not, there are several versions of mixed orange and lime juice kicking around, said to replicate it.

After trying several of them, I've settled on one tablespoon fresh lime juice to one cup fresh orange juice (more precisely: juice of a large lime to 1 1/2 cups oj). This is as close to the true gelt as I've been able to come.
