TOSTONES ... ( Platano Macho ) ... Plantains ...
Tostones, originally from Western coastal Africa, were brought to Cuba, Puerto Rico, the Dominican Republic and several countries in South America by the Slave Traders, are a favourite savoury treat of mine, especially with a Cuban Sandwich.

Here is my dear old friend who was born and raised in Havana, Cuba, Maria Vilarchao´s Recipe:
2 pounds of unripe green plantains ( 3 ) = platanos machos
2 cups Vegetable Oil or Olive Oil
Salt
Lime
Paper towelling for draining
1. Cut the ends of each plantain, with a sharp knife and cut a length wise slit, through the peel. Cut the plantains, cross wise into 1 Inch thick pieces and at beginning of slit, pry off the peel.
2. Heat 1/2 Inch Oil in a 12 Inch Skillet, over medium heat. Sauté the plantains until golden in 2 batches.
3. transfer to paper towels when golden on both sides. Drain the oil.
4. flatten each of the pieces of plantain, to 1/4 inch thick and press with an " iron " or heavy weight
5. salt and re-sauté in the same oil, 3 minutes ( that is one and a a half minutes per side ) in batches until crisp yet NOT brown ... deep gold ...
6. place on paper towels and drizzle with lime and sprinkle with additional salt
7. Serve with a: Cuban sandwich and a cold beer ... or Malta ...
