it is in my family for years as a side dish .
it is easy it is quick and it is yummy.
first the pickling juice .
 
for 3 cup juice
2 cup vinegar 1 cup water (if the vinegar is to powerful go 1:1)
5 cloves thin sliced garlic
5 Birdseye chili Thin sliced with the seeds.
give it a stir and it is Ready
(the garlic and the chili quantity is not set in stone you can play with it for your taste )
the aubergine
 
slice the aubergine thick salt it and let it drain all the moist
fry it till brown and drop it from the oil in to the the pickling juice.
let it sit for minimum 4 hours (longer it sit better it gets)

Hope you are having a wonderful wkend. This marinated Eggplant salad looks very similar to one I had in Sicilia ... Well, the Moors brought the Aubergine / Eggplant to Sicilia around 800, during  their conquest of Andalusia, Spain and vicinity. 
 
Very much my all time fave vegetable.
 
I love Melanzane ... I shall give it a try for sure ... So Easy ... and a warm Focaccia for dipping !
