Ron's rib post got me to thinking about the naranja and I picked some up originally to use on ribs myself, but when I realized the ribs had been at the bottom of the freezer for over three years, I figured it wouldn't be a fair test of how it would taste with a fresh rack.
On to plan "B" Had some nice drummies in the fridge and put them in a ziplock swimming in the naranja for a few hours.
When they came out of the marinade I dried them off and dusted them with some nice adobo, then put them on a medium-hot grill.
I also got some nice sweet corn ready to go with it.
Brushed some nice sweet corn with olive oil and put it on the grill when the drums were about halfway done...as long as the corn gets about 15 minutes we're golden.
Served it up with just a salad and all agreed it was very tasty. The seville orange came through loud and clear, but was not at all as bitter as I had feared it might be. I will add minced garlic and onion to this marinade next time and some herbs as well...It certainly won't overpower the bright, clear clean taste the orange brings to the yardbird.
Now I guess I'll have to pick up some new ribs and try it with them.
