Eggs are a common staple in the Turkish repertoire. Eggs are an ingredient which are commonly served as meze, a light dinner and / or as an appetiser. They can be poached, set of on a bed of Turkish Yogurt, and drizzled with dried crush red pepper and drizzled with red pepper sage butter.
Dried crushed red pepper is more popular outside of large cities than black pepper.

ANATALAYA SPICED EGGS WITH TURKISH YOGURT
* Greek style yogurt is a good sub.
4 Servings ...
1 cup Greek style yogurt
10 fresh sage leaves and / or scallions or chives
1/4 cup or 1/2 stick butter
1/2 tsp. paprika
1/4 tsp. dried crushed red pepper
1 tblsp white wine vinegar
8 eggs
warm pita bread
1. combine the Greek style yogurt and garlic in a small bowl
2. season to taste with salt and divide the mixture equally amongst four plates, spreading to coat centre of the plates
3. melt butter in small sauce pan, and over medium heat, sauté the sage, paprika and the dried red crushed pepper and gently stir with wooden spoon just until the butter sizzles
4. remove from heat and season with salt
5. add vinegar to a large skillet of simmering water and crack the eggs in the water
6. simmer until eggs are softly cooked about 3 mins.
7. using slotted spoon, remove eggs from water and drain lightly and place 2 eggs atop yogurt upon each plate
8. rewarm the butter mixture if necessary and spoon over eggs and serve immediately with hot oven warm pita & adorn eggs with scallions or chives.
