Years ago on a fishing trip at Lands End "Cabo San Lucas", this trip was paid for by the brand of equipment my company sold.  Customers that had bought enough equipment received a trip to Cabo and I got to go with them. 

We were at dinner at one of Cabo's best restaurants.  Most of my customers/friends had ordered Shrimp Cocktails, which came in huge glasses rimed with Giant Sea of Cortez Shrimp.  I had tasted these shrimp the day before and when cold they were tough and generally flavorless.  I saw on the appetizer menu Ceviche, most of my friends had never had authentic Ceviche (made with fresh Sierra Mackeral) so I ordered double, this was years ago they didn't have tortilla chips on the menu or serve them when you sat down, so I asked them to fry up some corn tortilla's  cut into chips, and asked for fresh made quacamole and Pico de Gallo (tomato, onion,  cillantro, jalapeno, lime and a little garlic) salsa, and some sour creme.  The two orders arrived and I had everyone take a chip loaded with Ceviche, topped with some quacamole, and pico de gallo and a little sour creme.   Everyone asked the waiter to take back their shrimp cocktails and bring exactly what I had ordered.

At this time I lived in So. Calif and there was a lot of good Mexican places too eat.  But years before I had lived in San Diego and made several trips across the border and it was San Diego and Tijuana where I learned what good Mexican food taste like.
