When it's time to make lasagne or ravioli at our house some time will be spent making a batch of

 pasta to use. Like most folks, if we are just having spaghetti or linguine or some other macaroni it will be dry boxed pasta...but for these dishes I just must make my own.

This recipe is used in conjunction with my Kitchnaid mixer and is a great all-around pasta recipe.

3.5 cups all purpose flour, sifted
4 eggs
2 (or more) Tbsp water
1/2 tsp salt

Place all ingredients in the mixing bowl and mix for 30 seconds with the flat beater or until combined.


Now we switch to the dough hook and knead it on speed 2 for about 2 minutes. I had to add about 3 extra Tbsp of water to this batch.



Now we knead it by hand for 1 or 2 minutes...you'll know by the way it feels when it's ready.
Now wrap it in saran and let it rest for ten to fifteen minutes.


After the rest, I cut the pasta into several( 6 or 7 ) pieces and flatten them, then run them through the pasta rollers several times, working your way from the widest setting down to about 4 or five for ravioli or lasagna noodles


When you are done, you will have some beautiful long sheets of pasta ready to be transformed into ravioli or whatever you wish.

These particular sheets became fettucini and were served in a marinara with meatballs. (sorry forgot the later pics)
