With the holidays coming, this is such a lovely color marmalade or jam and truly has such a soothing and wonderful aroma ...
 
 
Simple Rose Marmalade ...   
 
 
                    
 
 
 
                                            
 
 
 
 
                                          
 
 
 
Ingredients:
 
one half pound pink or red fresh unsprayed with insecticide ecological Roses
2 cups sugar
4 1/2 cups mineral water
the fresh juice of 2 lemons
***SOAK the petals for 3 nights
 
1) wash the roses thoroughly and remove the white bottoms off each petal and separate the petals
2) place the rose petals in a large bowl and sprinkle the sugar over and make sure, the sugar coats each petal
3) in a medium saucepan, pour in the remaining sugar, the water and the juice of 2 lemons including ( do not throw seeds away as they contribute pectin, which shall thicken the marmalade) and simmer 1/2 hour over low heat
4) place the seeds of the lemon in the medium saucepan as they have a thickening agent
5) stir and place a thermometer at 1/2 hour: 105 degrees centig. or 221 farenheit
6) let the marmalade cool to room temperature & remove the lemon seeds
7) place in sterilized jars and put in a cool closet for 3 nights
 
SERVE WITH CROISSANTS OR AS AN ICECREAM SUNDAE SYRUP ...

margi, i must indeed find a source for fresh rose petals - this loks like something i would love to try, along with rose water, rose syrup and "turkish delights...."

Thanks alot for your contribution and feedback.
 
As I had mentioned, just request non sprayed with insecticide Roses of the color of your choice.
 
They can be found at most Farmer“s Markets and Florists or online.
 
This is something very light, aromatic and elegant.
