Buonasera,

My mom Eva, used to tell me that her mom Margot used to prepare her Orange Streusel in Basel, Switzerland when she was a wee toddler. Here is the simple recipe to have with your morning or mid morning coffee or tea.
One can prepare this recipe with apricots or almonds and the topping can be sprinkled with chopped almonds.

Eva´s  Orange Streusel Cake ...

1 Cup brown sugar packed
125 grams room temperature butter ( 1/2 cup )
2 eggs whisked
2 cups flour
pinch of salt
3 tsps. baking powder
1/2 cup fresh squeezed orange juice ( 125 ml. )
1/2 cup whole milk ( 125 ml. )
2 tsps. vanilla extract
2 tsps. grated orange zest
*** Streusel Topping ( see below )

1) cream together butter and brown sugar and beat in the eggs
2) add sifted dry ingredients alternatively and gradually with the orange juice and the milk
3) stir in the vanilla extract and zest
4) pour the batter into a well buttered and floured 9 inch ( 23 cm. ) square baking pan and sprinkle with Streusel Topping ( recipe below )
5) bake at 350 farenheit degrees for 40 to 45 mins.

STREUSEL TOPPING ...

1/3 cup sugar
1/3 cup flour
3 tblsps. butter ( 60 grams )
1 tblsp. orange zest

Combine all the above ingredients until you achieve a crumbly mixture and place on top

Enjoy,
Margi.
