We were living in San Francisco for a couple of years in the 1980s, and during that time, my Nonna came to visit us, and she prepared this cheesecake. My grandmom Margherite´s Marble Cheese with a Graham Cracker Crust has always been one of my faves. Here is her recipe. Grandmother Margherite´s Marble Cheesecake ... 1 1/2 Cups Graham Cracker Crumbs 1/8 cup sugar 6 tblsps. sweet butter melted 4 eight ounce packages of Philadelphia Cream Cheese or similar brand softened 2 tsps. vanilla 1 1/2 cups sugar 6 eggs 2 cups light cream 2 two ounce squares of chocolate unsweetened and melted a) combine cracker crumbs, 1/8 cup sugar, and butter. Press in the bottom and 2 inches up sides of a 9 inch spring baking pan and set aside b) beat the cream cheese and the vanilla until they fluff c) gradually add in the 1 1/2 cups sugar d) add the eggs, one at a time, beating until just combined and then stir in the cream e) Now combine about 3 cups of the batter with the cooled chocolate that you melted and place in a separate bowl f) pour the plain cheese mixture into the Graham Cracker Crust, and then, gradually zig zag the chocolate g) bake at 450 degrees farenheit for 15 mins. and then, reduce oven to 350 degrees farenh. and continue baking for 1 hour or till knife is inserted halfway between centre and edge and comes out clean h) cool one hour and remove sides of the pan and chill the cake overnight Enjoy the marble, Margi.
