Fruity chicken salad is always a lovely sandwich during the laboral work week. Here is my daughter Naia´s Fruity chicken salad.
 
HAWAIIAN CHICKEN SALAD
 
2 cups fresh pineapple sliced in slices or chunks
1 cup white grapes or red grapes
dash of freshly ground black, rose, green and white pepper
salt to taste
1/4 cup toasted walnuts
1 1/2 cups of mango sliced in dice
2 cups chopped & cooked chicken breast
1/2 cup of homemade mayonnaise
1/4 tsp. ground ginger
1/4 cup green scallion, or spring onion or  red onion
 
 
1) COMBINE the mayo, salt, ginger and freshly ground pepper and mix thoroughly
2) add the chicken and the fruit and onion, mix gently and chill
3) serve on lettuce of choice covered platter and top with walnuts
 
SUGGESTIONS:
 
a) serve salad in a pineapple shell ( looks great too )
b) sub apples for walnuts if you wish
c) serve on bread of choice, as sandwich with lettuce of choice

Margi--great recipe.

As I've shared with you earlier, I make a more basic grape/chicken salad recipe and DH is taking it to work on Monday for a holiday celebration.
Mine just has chicken, grape halves, chopped or sliced almonds, mayo, sugar and white pepper.
(no celery which is usually in the salad, and no ginger--too spicy for DH)

I'm going to add some chopped maraschino cherries, for some more color. I have a fresh pineapple sitting here looking at me, so I might slip some of that in the salad too.

I enjoy it in a bowl, and in a sandwich made with a soft whole wheat bread and lettuce.

Feather, Of course they were in stitches by the entertaining forum I dedicate so much time on ! They both said, Mom knows the most diversified & interesting of people...   And your undertakings gastronomically fascinated them, so I mentioned you; lady pen friend! We should start a Talk similar to Oprah ...Show and with famous chefs and creative home cook for guests... ha ha...
