CLASSIC GREEK COD WITH FRESH PEACHES OF RHODES ...
 
On the island of Rhodes, in the eastern Mediterranean, where 7 language speaking Spanish Queen Sophia was born, is a village called Lindos.
 
 
 
This Greek island, is one of the closest to the Persian Empire, now called Iran, and thus, the penchant for combining fruit with fish, chicken, game and meats is very common.  
 
There is a tavern there called Mavrikos, and the owners and Chefs, Dimitris and Mihalis Mavrikos had given me their recipe, several years ago, during a wonderful epicurean escape to the Greek Islands ...
 
 
 
This dish is often prepared through-out the Mediterranean with semi sweet white grape Moscatel or Moscat ... and seasonal fruit or raisins.   
 
RESTAURANT MAVRIKOS FRESH COD WITH PEACHES ...
 
1.5 kilos of fresh cod or fresh scorpion fish or any firm white flesh fish
 
400 grams of zucchini
 
1/2 cup of Evoo, preferably Greek Evoo
 
2 shallots, or green scallion 1 small spring onion or 1 yellow onion of choice
 
2 garlic cloves sliced into slivers lengthwise
 
juice of 1 large lemon
 
1/3 cup Semi sweet Greek Muscat from Rhodes, or semi sweet white wine from grape variety Moscatel of Italia or Spain
 
salt to taste and freshly ground black pepper
 
1/2 large bunch of fresh Mint herb, julienne sliced finely
 
HOW TO´s ...
 
1) rinse the fish fillets well and pat dry thoroughly
 
2) wash and peel the zucchini  or corgette; remove seeds, and slice into diced cubes or viruta strips
 
3) heat the Evoo in a large saucepan and sauté the shallots / onion of choice
 
4) then, add the garlic and sauté until just tender and lightly golden
 
5) Now season with salt and black fresh pepper and add the zucchini or corgette as it is called in the U.K.
 
6) Once, slightly tender, add the fish and drizzle with fresh squeezed lemon and the white wine and add the peeled fresh fruit ( I use peaches, however, one can sub Mango, Nectarines or  diced
pear ... )
 
7) readjust the seasoning and add the mint and simmer until zucchini tender and fish just done; do not over cook the fish
 
SERVE THIS VERY ELEGANT FISH DISH,  WITH WHITE SPARKLING WINE OF CHOICE AND OVEN WARM PITA ...

A pear is something I can try at this time.....
I will keep this recipe for later Margi when my father in law can send me some peaches from his trees....

Good Morning Souvlaki,

This elegant dish is amazingly aromatic and possesses a lovely fragrant semi sweet hint of fresh fruit ... One can employ: pear, peaches, apricots, kiwi, or mango ... MANGO works very nicely with the cod ... Peaches are my favorite however for this dish ... and I know Greek Peaches well !

Absolutely a true delight ..  

Shall have to have Ron put up new photographs ..

Peaches from  Aragon are now in season, so I shall prepare this with some fresh wild cod or grouper ..

( Scorpion or Red Dragon fish is a Winter catch for us ..  )
