I spent most of yesterday making a batch of Apple Molasses. I saw Tas mention it on here sometime back and made a one gallon batch last year. This time I made a two gallon batch. I put one gallon in each of two non reactive pots to speed up the process and then combined them into one when I got near the end. This is such a simple process. Just pour the cider into a pot and gently boil until it's reduced by about 8-1. I didn't boil vigorously for fear of scorching so it took about 6 hours to complete the process. I skimmed the foam often at first and one last time just before bottling. The last skimming only yielded about a tablespoon full.

In the end I have a quart of rich dark molasses that has an intensely sweet apple flavor. It should be shelf stable but I'm going to refrigerate it. I put it in a clean clear glass wine bottle that has a screw top. (Nothing but the best wine in my house. LOL)

I used a last years batch in a variety of recipes.

I diced an apple very finely and added it and apple molasses to oatmeal cookies instead of raisins, replacing about 1/2 of the sugar in the recipe with the molasses. This is one of my new favorite recipes.

I added a couple of tablespoons to apple pies, again, replacing part of the sugar. This raises to apple flavor to a whole new level.

I used it in a whole wheat bread recipe, replacing the cane molasses called for.

I can't wait to try it in a finishing glaze for smoked meat.

Hey, RD  I'm glad you tried this - it reminds me that I need to make more!

I love the apple flavour, especially when combined with the rich, caramelised undertones. This stuff is useful in many ways!Thumbs Up
