Þorskur með Eggja og Smjörsósu
Icelandic Cod with Egg and Butter Sauce

This dish is traditionally served at Þorláksmessa - Saint Thorlak’s Mass - on December 23.

4 (8-oz.) skinless cod fillets, pinbones removed
Kosher salt and freshly ground black pepper, to taste
2 tbsp. olive oil
16 tbsp. unsalted butter
2 eggs, hard-boiled, peeled, and roughly chopped
1 tbsp. minced parsley
Lemon wedges, for serving

Heat oven to 350 degrees. Place cod on a baking sheet and season with salt and pepper; drizzle with oil. Bake until cod is cooked through, about 15 minutes. Melt butter in a 2-qt. saucepan over medium; stir in eggs and cook until eggs are heated through, 1–2 minutes. Divide cod between plates; spoon sauce over the top. Garnish with parsley; serve with lemon wedges.

We made this for supper one night, and it was very good. My #2 son, Mike, prepared it, while we were coming home from work, and he found it to be very easy to make.

For such a limited effort, the dish put forth an amazing meal. we served it with steamed cauliflower, broccoli and other vegetables, and found it to be really be good. It is on our rotation for serving again during Lent, and I am sure that it will be just as good a second time.

It's very easy, very good, and worth a try.

This was very good...very healthy. Very easy.

I heartily recommend it, especially with your access to wonderful fresh cod.
