Each day, I get a "recipe of the day" from Saveur's online magazine. Every now and then, one of those recipes catches my eye; but almost every time, it seems that the recipe has been "cheffed up" to the point where I wonder if it would be recognizable anymore in its place of origin.

I understand that Saveur would want to show a nice, attractively-presented dish, but I fail to see why they would modify something with hard-to-find and/or expensive ingredients. It can't simply be in an effort to be "trendy," can it?

I think that's it exactly. Well, maybe not "trendy" but "trend setters" if they can change a recipe to use exotic ingredients and then one of them becomes the new salted caramel, then they can say "hey, we've been using that since xyz!"

Trend setting, Mike? Hmmmmm. Yesterday's Saveur ran their favorite savory pies as the recipe of the day.

I started my thread on that subject back in 2012.

So, there you go: Foods Of The World ahead of the curve!

I don't know that they would ever actually be trend setters, what I meant was that's how I envision them seeing themselves! LOL  Oh, and FOTW always has been ahead of the curve. A hidden gem for those that know what to look for Smile
