I've sworn by my Wusthof Classics for many years but decided to pick up some Globals since they are all the rage with professional chefs to see if they live up to the hype. I used them tonight for the first time and, wow, am I impressed.    These are the sharpest blades I have ever used, they're like straight razors.  They just glide through vegetables like butter with no effort.  I do a lot of cooking that requires a lot of prep and these are going to take a lot of the work out it.  They are perfectly balanced, half the price of my German knives, half the weight, and twice as sharp.  I already love the Santoku with the Granton edge, it will probably replace my chef's knives for most prep work.

Sure does look like a nice set of knives.....I only have one 
Japanese knife....A Shun offset serrated that I absolutely love....especially for getting paper-thin slices of tomatoes.

Those sounds like really nice, knives, indeed. And that price is, I am guessing, a very good one. Something to go on my wish list, after the kids leave!
