Tried making this recipe this weekend: http://www.oliviascuisine.com/authentic-brazilian-cheese-bread/ They're supposed to be soft and fluffy. I don't know if its because I used a duck egg, or too much cheese, or baked them wrong, or what, but these are soft and chewy. Basically cheese in a crust. Which would actually be awesome, only the recipe calls for mostly Parmesan, which isn't my favorite. It's fine as, say, a coating for Chicken Piccata, but if I'd known I was going to be eating gobs of melted cheese, I would've stuck with the mild gooey stuff. ------------- Melissa http://carpelibris.wordpress.com/ - http://carpelibris.wordpress.com/ |

Melissa, These Tapioca flour cheese biscuits or bread are delicious .. I had eaten these for breakfast in Sao Paulo when I was there a few years ago .. I saw a wonderful and simple recipe on The BBC Good Food Website .. I think the milk and the Mozzarella perhaps made the biscuits too too wet .. Take a look at the BBC Good Food Website, which has its nuances .. I am not sure what went wrong with your Tapioca Flour Biscuits ..
