Certainly an interesting start. But considering that France, alone, has 450 named cheeses.......

Great infographic but it took me an hour to read the whole thing about these different cheeses across the globe. Though it is great for cheese Enthusiasts.

A good start on basics, however, Spain has 300 various cheeses predominately of raw sheep´s milk and raw goat´s milk.  In the northern provinces of Galicia and Asturias, one shall encounter some raw cow´s milk cheeses.  

Of these, approx. 75 are exported. 

Big cheese-a-holic ..  

The Canary Islands (7) and the Baleric Islands (4) are missing on map !!  Big cheese producers too.

The Cadaquès region of Northern Girona, creates Mato which is a dessert prepared with either Goat milk Ricotta & honey or Sheep milk Ricotta with honey and /  or Cow milk Ricotta with honey. The other ingredient is  fresh rasberries  and this is an early autumn or autumn dessert which both Salvador Dalí loved and Ferràn Adrià created his  21st century style of the Salvador Dalì dessert.
