Alright, this was tonight's dinner. Turned out pretty good too...

Take the onion, pepper, and ground beef, and fry it up...

After the macaroni is cooked, add in the cheese sauce that we've just made....

Mix it up real good, then pour into glass baking dish, then get your ritz crackers...

And crumble them over your food....

Bake 375 for 10 minutes to get the crackers nice and golden...

To recap, the recipe is....
bacon-crumbled onion-minced red bell pepper-minced can of corn ground beef 1/4 lb of velveeta cheese black pepper 3 packages of Deluxe macaroni 1/2 cup of milk 2 tbsps of flour 2 cups of cheddar cheese 1/2 cup of ritz cracker crumbs
Fry the bacon, crumble it, add the minced onions and bell peppers to the bacon grease, cook until onion is translucent but not carmelized, add the ground beef (cook until browned) add the flour, pour in the milk one tablespoon at a time, whisk the mixture to prevent clumping, when all the milk has been added, allow sauce to simmer for 10 minutes, then add velveeta cheese, cheese sauce packets and season with some pepper to taste.
Cook pasta according to package directions. Drain. Add sauce mixture to pasta, stir in corn and cheddar cheese. Put in 11 by 13 glass baking dish. Top with ritz cracker crumbs. Bake for 15 minutes at 375 degrees.

Delicious cheesey goodness! What a nice comforting supper. Your bell pepper sure looked nicely red and perfectly ripe, I'm sure it added a whole level of taste to the dish. Never added bacon in ny version and your thick cut slices sure looked good- I'll have to try it that way next time I make it. Love that meal!

It turned out great, and there are leftovers (3 packages make QUITE a bit) for snacking the next couple of days.
