Anybody done it? Many of the Portuguese recipes for sweets and desserts I'm researching call for vast amounts of egg yolks. I'm not talking one or two, here. For instance, one cake recipes calls for 14 egg yolks, in total. I would hate to toss the whites. But have no idea if they can be frozen. So, if anyone knows, please share. I once did as I had made " Saint Theresa´s Yemas " ( An egg yolk candy type pastry) eaten during Lent at Holy Week from Avila. You should let the whites thaw for approx 30 to 45 minutes before using .. ------------- Volamos a Mediterraneo, un paraiso que conquista su gente u su cocina. |

I've heard that egg whites can be frozen, but have never tried it.
