Lunch today is a peas frittata/frittata di piselli
A bit of fresh thyme, a bit of lardo, garlic, black pepper, a pinch of salt, 4 beaten eggs with grated Parmigiano and voilà!

Very lovely Fiorenza.  

Thank you for posting.  

It is not yet season for fresh sustainable sweet peas in a pod yet ..  

Temperatures are a bit radical here. 

Mornings:   7am -  Zero to 5 degrees centigrade. 

11am - 13.00:   18 to 22 degrees centigrade .. 

However, weather reports state a cold front coming our way  !! 

March is radical totally and extremely windy. 

Hope all is going well.

You are right, not season for fresh peas (unlikely), they are the frozen ones. Fresh peas are all another story, but that could be a good alternative.

Nice recipe truly ..

I love spinach and it works well too in a fritatta or omelette and readily available in Spain most of the year ..  

I am really not a fan of frozen veggies or frozen anything for that matter. 

Looks very good none the less.   May, June !!!
