Adobe marinated fish is a very common Spring - Summer tapa that is very simple to prepare.

Ingredients:

400 grams of a thick white fish chopped in large square chunky cubes
3 cloves of crushed garlic
a pinch of dry oregano
2 bay leaves
Sweet La Vera Smoked Pimentón (available in all Latin Markets and Grocers) "pimentón dulce"
white wine vinegar to taste 

Marinate the fish 3 to 4 hours. 

Just before the preparation, heat plenty of Evoo in a deep skillet and remove the fish from the marinade, shake off excess liquid, coat in Semolina flour, and cook in very hot oil until golden on both sides.

Serve immediately with home made ali oli (garlic mayo and Evoo beaten or whisked until you achieve a mayonnaise consistency) .. 

Can be lovely with sword fish, cod, tope shark or other thick white or blue fish ..
