First off, let me preface this with I'm not really sure what section this falls under. I'm 100% certain this is not an authentic Mexican recipe, and not really a regional US thing either, but a Americanized take on Mexican food similar to our hard tacos with lettuce that you would never find in Mexico. Anyway, if there's a better place for this please move it.

With Taco Bell (of which I will never eat) reintroducing their Mexican Pizza and all the hype surrounding it, I thought I would try to recreate it, but surely I could do it better. The recipe is really very simple and I suppose the only changes I've really made are the toppings and the tortillas used. Taco Hell (yes, that's how I refer to it) uses fried flour tortillas as the base, where I, being lazy as I am, used pre-made tostada shells (basically hard corn taco shells that are fried flat). If I had more time I think the ultimate way would be to fry your own corn tortillas into the tostada shells.

Ingredients
  • 1 package Tostada shells
  • 1 can of refried beans
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 2+ cups shredded Mexican cheese blend
  • 1 small can red enchilada sauce
  • toppings can be whatever you want: diced tomatoes, diced onions or sliced green onions, sliced olives, jalapenos, etc.
Directions
  1. Preheat the oven to 400 degrees
  2. Line a baking sheet with aluminum foil and spray with cooking spray
  3. Make taco meat using the ground beef and taco seasoning per instructions on packet
  4. Heat the refried beans until thin and spreadable
  5. On one tostada spread a thin layer of refried beans, then taco meat
  6. Place it on the baking sheet and add a small amount of cheese
  7. Place a second tostada on top, and spoon a layer of enchilada sauce on it
  8. Add desired toppings then cover with shredded cheese
  9. When all pizzas are assembled, or the baking sheet is full, put into the oven for 6-8 minutes until the cheese is fully melted and starting to brown.

Pitrow,

This is a quite a fun quick lunch on a terrace (or backyard) !  A super idea !!!    

Of course a Mexican La Negra Molido or Corona Beer would be a perfect pairing too. 

Going to prepare this during the week.  I need to purchase the majority of the ingredients and do a Spanish - Mexican Pizza on corn tortillas !!
