I'm posting this link both for my own future reference and to foster any discussion that might take place.
My youngest son Roger is having a blast, having just become a new father in November and working as a team lead at an up-and-coming restaurant in Montana's capital, Helena. The restaurant - called The Hopper - specializes in unique, well-prepared dishes across the culinary spectrum from all over the world, highlighting fresh, local ingredients, a creative, seasonal menu and components hand-crsafted in-house, such as pastrami, breads and fermented products, to name a few. While there are interesting fusions, there is also a lot of good, traditional cuisine involved, as well.
Anyway one of his current work favorites is this, Kadhi Pakora. When he brought it up to me, I was intrigued and found this recipe, which looks to me to be typical. I don't know if I'll ever try it, considering that some of the ingredients may be out of my reach, but I am definitely interested....
