Grilled fish with Tomato and Tarragon


A delicious , easy way to prepare your fish on the grill

   4 fillets white fish
   1 thinly sliced medium tomato
   1 Vidalia onion, thinly sliced
   1/2 stick butter, melted
   2 tablespoons white wine worcestershire sauce
   1/4 cup chopped fresh basil
   3 tablespoons chopped fresh tarragon
   1 tablespoon freshly squeezed lemon juice
   Lawry's seasoned salt

1. Combine the melted butter with worcestershire sauce and lemon juice.
2. Place fish on individual pieces of aluminum foil.
3. With a pastry brush, apply mixture to both sides of fish.
4. season with Lawry's salt, and half of the basil and tarragon.
5. cover fish with a layer of onion, then a layer of tomato..season with remaining basil and tarragon.
6. Pour the remaining sauce equally over the four fillets.
7. Seal tightly and grill the packets for 6-8 minutes per side, or until the fish flakes easliy.

Serve with salad, string beans and rice or potatoes.
First, here is what we need to get started:

chopped tarragon and basil, butter, lemon,onion, tomato white wine worcestershire and Lawry's
 
After melting the butter with the worcestershire and lemon juice,place the fillets on aluminum foil and paint the fish with on both sides, season with lawry's salt and sprinkle with half the tarragon and basil.
 
Then layer the fish with thinly sliced vidalia and tomato, add the rest of the tarragon and basil, and pour the remaining butter mixture over all and seal tightly.
 
Grill over medium high heat for about 6-8 minutes per side (depending on thickness of fillets)
Remove from heat, plate and enjoy!

Excellent post Dave, and I have to congratulate you on those beautiful tomatoes. Wow....very nice and tasty looking. Not to take anything away from the fish at all- the whole thing was great! Perfectly plated pic and the set up was great, as well. The green beans looked superb and that rice looked outstanding..what was in it? Delicious and looks to be a post within itself! Thanks for sharing your dinner and your process~
