   For our first fattie this summer, we decided on salami, cheese, and peppers with a bacon weave. We gathered the goods...

 
...and went to work.
   First, I chopped the peppers...
 
...which were a mix of Serranos, Thai Dragons, and Jalepenos. While my brother grated the cheese, I weaved the bacon.
 
 
He then pounded the chub in a ziploc bag until it was uniformly flat.
 
 
We piled the fillings on it...
 
 
...and carefully rolled it up. After transporting the precariously full fattie onto the bacon weave, we wrapped it in plastic and placed it in the freezer so it would stay together. A little while later we stuck it in the smoker over hardwood charcoal and mesquite chunks...
 
...and waited. One game of croquet later it was ready. Thankfully there were no blow outs, so all of its deliciousness was contained inside. Take a look at the finished product...
