Yesterday evening got a nice surprise by a late delivery to our door. A package from the North East and I knew it was Dave's Pickles~sure enough!
Two nicely packaged jars of his home-made specialties. A pint of Bread & Butter Pickles and a Pint of Kosher Dills. I waited 'till this afternoon to open them and sample the goods. Good grief they were outstanding!
First the Kosher dills. Can't say enough about Dave's recipe. He added some chili pods and garlic cloves to the brine which turned a great pickle into a superb pickle....no hyperbole here. Seriously, I loved the kick those two gave not only the brine but the pickle itself. A real nice bite back when eating it. That garlic clove was a bonus to eat, not just for its flavour but for the rest it picked up as well and I hope there is another one lurking in the jar!
Second the Bread & Butter pickles. Wow. Double Wow. Don't know if it was the whole mustard seed, or some yet-to-be-deciphered spice, but these babies had a richness and flavour you just don't get in Bread & Butter pickles! Nice loads of onions too, I loved that; but back to the pickles. Just-right sweet, not that cloying overload of sweetness you get in store bought ones, nor in a lot of homemade ones, either. These were absolutely perfect, with just the right amount counterbalanced by the onions and that yet-undiscovered spice! Wow.
Got to say that in the last few years I've been playing with the idea of trying my hand at making pickles. Dave's pickles are so good that I am now committed to trying my hand next year, for the first time. His pickles are not only delicious, but showed me how good pickles can really be. Thanks, Dave- these babies won't last long!
