Rebhühner mit Sauerkraut Clean partridge. Rub inside and out with salt and pepper. Cover with bacon slices. Heat the butter in a large saucepan. Brown partridges well on all sides for 10 minutes. Add onion, juniper berries and broth. Cover and simmer for about 1 hour or until tender. Baste with liquid 2 or 3 times during cooking. Cook the sauerkraut, joint the birds. Arrange on a heated platter with the bacon. |
