While reviewing some of my photo files, I came across this recipe that I entered in the Smoking Meat Forum throwdown for appetizers last winter.
 
I had smoked up a bunch of pastrami, and was trying to come up with an original appetizer when it all just fit together. Smoked up some portobello caps, stuffed them with smoked pastrami, kraut, thousand islands dressing and then top with gruyere until melted. It took second place in the judges voting for the throwdown...thought I would share it with the folks over here as well.
 
Here's what we started with:
 
 
Mixed up the pastrami, kraut and dressing and let the flavors meld
 
 
Oiled up the mushrooms and popped them in the smoker for awhile
 
 
Fill the 'shrooms with the pastrami mixture, top with the gruyere and back in the smoker
 
 
Plate it pretty, then enjoy.
