I"m posting this in the Midwest section since the recipe came to me from North Star Bison in Wisconsin.
 
2-3 lbs Bison Ribs
Salt & Pepper
32 oz can Sauerkraut
2 Onions, Wedged
2 Tart Apples, Cored & Wedged
1/2 cup Brown Sugar
 
Rub salt and pepper on ribs.  Sear with oil in skillet
Place 1/2 of sauerkraut in bottom of crockpot.
Add ribs, apples, onions and remaining kraut.
Sprinkle bown sugar over top.
Cook in a crockpot on low for at least 8 hours or until meat easilty pulls away from bone.
 
Tried this recipe over the weekend and it was outstanding.  (Sorry, still not thinking of taking photos....too busy eating Smile...will take photos next time).  Of course you could substitute beef ribs, but the bison is outstanding.

I would love to taste some bison, and it's funny how some things just naturally go together- like ribs and kraut! Gotta have the pics or it never happened!  LOL

Bison is great...very tasty and easier to digest than beef.  Another reason to go with Bison is that it is grass-fed and antibiotic and hormone free.  A really rich taste.  Our local Whole Foods sells some bison cuts, but not everything.  I regularly get the bison burger, a roast or two, and some steaks from there.  For other cuts I have ordered from North Star Bison.  I can recommend the company and their product from my experience....they are on the web.

I make a similar recipe often. I use Pork steak instead of Buffalo Ribs. I bought 3 pounds last week  for  $1.09 a lb. Cheap eats! I trim most of the fat off and layer them in the crock pot. I sometimes substitute no sugar applesauce or a cup or two of cider for the apples. Very good basic recipe that I was actually coming on here to post when I saw jkeiths almost duplicate one. Rockydog...I like your use of applesauce rather than the tart apples....I'll have to try that variation myself!!  JKeith
