Confession - I've never had a Good risotto. I figure I should fix this, but I'm not sure where to start - I find the basic risotto a bit boring, so I'd like something a bit out there. Anyone got a recommendation for a mind blowing, world changing, paradigm shifting risotto?

I've been toying with the idea lately of a garlic/mushroom risotto with finely minced Thai bird chili and maybe some prawns, but in all honesty have not done it yet. I'm not sure yet if I would use chicken stock or seafood stock.
Or maybe garlic and fresh ginger...following the Thai theme...kaffir lime,oyster sauce...any fresh veggies and some chicken or shrimp, or even crab might be nice. I think it might be nice as long as I don't go over the top with the bird chilis. Well, that's my 2ยข anyway. |

Have you ever put saffron in yours? Check out my Suppli Al Telefono thread inthe Italian forum. I made it that way and it was perfect. Better than any other rissotto I've had.
