Salt and Vinegar Roast Potatoes

To serve 4:

Ingredients

1 cup unfiltered organic apple cider vinegar
1 kg red potatoes, quartered
2 sprigs rosemary, finely chopped
2 teaspoons Flaked sea salt

2 tablespoons rice bran oil

Method

1. Preheat oven to 200°c. Combine vinegar, potatoes and 6 cups water in a large saucepan. Bring to the boil, then reduce heat and simmer for 10-15 minutes or until potatoes are tender. Drain well and cool for 10 minutes to dry slightly.

2. Meanwhile, combine rosemary and 2 teaspoons sea salt flakes in a small bowl and set aside.

3. Toss potatoes with oil and three-quarters of the salt mixture until well coated. Place in a single layer on a large baking paper lined oven tray. Roast for 30-35 minutes, turning halfway through cooking time, until golden and crisp. Transfer to a warm serving bowl and scatter with remaining salt mixture.

Tip:

There’s no need to peel the potatoes. We used red for the colour, but you can swap these for white potatoes if you like.

Woolworth's still exists?? My ex-husband used to work for them. I don't remember them having potatoes like that, though.

Woolworth's (also known as "Woolies") appears to be one of the two major grocery chains in Australia. I assume that there is a relation to the Woolworth's here in the USA that I saw in almost every fair-sized town of my childhood, but cannot say for sure.
