3 tablespoons minced white onion
1 orange, segments for garnish, 3 tablespoons orange juice
1 tablespoon rice vinegar
1 teaspoon minced jalapeño pepper
1 teaspoon jalapeño vinegar

I would suggest any good whitefish Ron...personally, I prefer to use flounder and scallops in mine.
Go ahead...play with your food!

Ron, In Mexico a common fish for making ceviche is Pacific Sierra Mackeral, I don't think you will find anything close to it here in Montana. I would use halibut or maybe shrimp, I think cod would also be fine,
maybe a bit to bland though. Also walleye would work.
