Split Pea Soup

Just catching up on some posts I've wanted to get up for a while now.
From my cookbook:

Split
Pea Soup 

My
version of the great pea soup Mom makes.

   1
lb split green peas
   1 meaty ham bone
   1
large onion, sliced
   1 cup celery, diced
   1
large carrot, grated
   2 quarts chicken
broth
   1/2 tsp ground marjorum
   1
tsp herbs de Provence
   1 tsp black
pepper
   Kosher salt to taste

Place
the peas in a large pot and cover with the chicken stock.
Add ham
bone and bring to a boil, reduce to a simmer and cover pot.
After
one hour, remove the ham bone and set aside to cool.
Remove all
ham from bone, dice and return to pot with all other
ingredients.
Simmer uncovered, stirring frequently for another
hour, or until soup thickens nicely.

Serve with fresh hot corn
bread, or corn muffins.

	Oh YUMMY, can't wait to try this recipe. Your cookbook (and the mafia one) should arrive any day now btw, I can't wait! Getting new cookbooks is like Christmas!

	Man oh man, I love split peea soup! Nothing more satisfying on a rainy day. Also, I finished reading the mafia cookbook last night, wow. What a life and what story! Great recipes too, by the way.
