one of the questions i get asked frequently is on cooking a steak.  while it seems elementary there is a small trick to it.  here is a couple of ways
#1 - have a steak - this is an excellent cut of meat - not to confused with shoe leather
If grilling:
Get the heat up there. 600 or so.  Put the steak on the grille for 2 minutes and then flip it over, shutting off the heat at the same time.  In about 6-8 minutes stick a thermometer into the center.
for rare it should be about 105. medium rare about 120.  (you just can't beat a good thermometer)
remove and leave rest for about 4-5 minutes.

if pan/oven
pre-heat the over to 350
Oil a saute pan.  again get it hot
sear both sides of the steak for about 2 minutes a side
Place the steak in the over for 8-10 minutes, checking with the thermomoter

the 2nd method is one used commonly in restaurants where they have to have everything ready to go at a moments notice

some good tips, butch ~ i've been trying it this way lately and have been getting great results, every time ~
 
this goes without saying, but in regards to your post above: a good sear is one of the most important things i've found for a great steak ~
