BOO!, is everyone still sleeping off a big meal or 2?
I have just rinsed off some pork loin, sugar cured for 6 days, and shall be mesquite smoked tomorrow.
Picture of the cured but not yet smoked meat.
Smoked picture to follow tomorrow.

Here it is after 7 hours of mesquite smoke, brought up to 175'
