Buona Sera, Good Evening,   
Due to the high level of acidity & pungency of olive oil jar and preserved sun dried tomatoes, Italians usually combine with creamy cheeses and a pinch of sugar to reduce their acidity.
Here are some informative ways to employ; a pizza topping; a provoletta; in a pasta; or as a pair for canapes with cheese, prosciutto, salami & or olives.
Now for a marvelous versatile Spread or Dip;    
150 grams of ricotta or cream cheese;
150 grams goat or cow cheese un.aged;
130 grams Greek Yogurt;
100 grams of minced sun dried tomatoes drained thoroughly;
150 grams fresh deseeded peeled large vine ripe tomatoes;
150 grams of shredded tiny spinach leaves or one peeled zucchini or both and: black pepper to taste;
Drizzle of evoo;   
parsley minced and two cloves garlic minced.
Combine with electric mixer & chill.
Serve at room temperature next day with crackers or breadsticks !
Enjoy. You can also spread on canapes and broil until bubbly !
