Filling
3 baked sweet potatoes 1/4 cup brown sugar 2 TBL sugar 1 egg (beaten) 1TBLheavy cream 1 TBL vanilla extract 1/4 tsp salt 1/4 tsp cinnamon 1/8 tsp alspice 1/8 tsp nutmeg combine all this in a mixer and mix until smooth spoon filling into a dough lined pie pan then pecan syrup 3/4 cup sugar 3/4 cup dark corn syrup 3\2 eggs 2 TBL butter 2 tsp vanilla extract pinch salt pinch cinnamon 1 cup pecan halves now pour this on top of the filled pie and bake at 375 for about 1 1/2 hours let cool while you make some chantilly cream 1 cup heavy cream 1 tsp vanilla extract 1 tsp brandy (snitching at this time is OK) 1 tsp grand marnier 1/4 cup sugar 2 TBL sour cream ref. till cold combine the cream, vanilla, brandy and grand marnier and beat on high for about a minute, then add sugar and sourcream & beat until you have soft peaks serve a heaping spoonful ontop of the pie and serve with a nice sniffer of brandy |
