Criadillas a la
Mexicana
Ingredients:
Directions: In a 4-quart stockpot, bring the Criadillas and just enough water to cover the meat to a boil over high heat. Reduce the heat to medium-low and let simmer for about 30 minutes or until the Criadillas are soft to the touch. While the
Criadillas are simmering on the stove, prepare the Salsa
Mexicana by chopping the tomatoes, onion, serrano chilies and a handful
of cilantro.
Once the Criadillas have finished cooking, drain and chop them into bite-size pieces. Heat 2 to 3 tablespoons of manteca (lard) in a large pan or skillet over medium-high heat. (If using the same pot the Criadillas were cooked in, be sure to dry completely with paper towels.) Add the chopped Criadillas and Salsa Mexicana. Saute for about 10 to 15 minutes; season with salt. Serve with warm corn tortillas for delicious Tacos de Criadillas a la Mexicana. Enjoy!!! |

A magnificent post MTman! by golly, that is what this forum is all about.
Now I'm not sure when (if ever) I will be in possesion of a bunch of bull's testicles, but if and when that day arrives I will know exactly what to do with them! That was great photography and a nice step by step of the procedure....and some awesome looking tacos I might add. Great job my friend, like I said...that's what we're all about.

i agree - a very wonderful post that hits right on what we are trying to share here. i'm also with dave on the photography - absolutely beautiful! really like the outdoor cooking aspect, which lends a rustic touch and provides the perfect atmosphere. your pictures put me right in there with you, and i could almost smell the fresh air and the cooking!
this one is truly a signature post for this forum that shows just what can be done with the right ingredients and a little time. thanks for posting!
now, i need to ask the obvious question ~ if someone doesn't have a supply of the ermm...primary ingredient....lying around....any acceptable substitute?
