based on kiwi's method, i am going to attempt paneer, probably this weekend.
his recipe calls for three litres, but i will attempt with a half-gallon, which is a little over half that amount. i am going to use whole milk for this.
for the acid, i will use either lemon or lime juice. kiwi's recipe calls for the juice of one lemon, so will will probably use something between that amount and half that amount.
i've never made this before, so if anyone has any advice or tips, let me know! when it is fisnished, i will see about putting a paneer together either this weekend or possibly sometime in the next week.

Cool! Don't be afraid to go over on the lemon juice, it won't harm things. If it looks like it isn't curdling properly, add some more. You'd be fine with going for two whole lemons as a starting point. Be gentle when it's curdling, you don't want to smash the curds.
Hahaha, and good luck if you attempt the roti. I was talking to a bunch of indians the other day, and bought up my roti frustrations. their debate about the right way to do it go so heated it slipped out of english.... So I have no idea what the conclusion was. |

thanks for the advice! i will probably see about doing some naan, which looks easy - i might be stretching my wings a little too much as it is without trying to do roti as well!
in your estimation, would you say that the lemon or lime is more an integral part of indian cooking, or would both be equally found there?
