I guess this is the best place to post this, since it is such a popular dish at cookouts.
 
Three Bean Salad a la Dave

My take on the classic...with greek seasonings

   SALAD:
   1 pound green beans trimmed and cut into thirds
   1 pound yellow wax beans trimmed and cut into thirds
   1 30-ounce can red kidney beans, rinsed and drained
   1 small red onion, minced
   1/4 cup turbinado sugar
   1/2 cup cider vinegar
   1/2 cup extra virgin olive oil
   1 teaspoon kosher salt
   1/2 teaspoon freshly ground black pepper
   1/4 cup fresh italian parsley chopped
   2 teaspoons GOOD balsamic vinegar
   2 tablespoons greek seasoning

 


   GREEK SEASONING:
   1 tablespoon dried oregano
   1 tablespoon dried mint
   1 tablespoon dried thyme
   1 tablespoon dried basil
   1 teaspoon dried marjorum
   1 teaspoon dried minced onion
   1/2 teaspoon granulated garlic

SALAD:

1. Blanch yellow and green beans in boiling salted water until crisp-tender, about 4-5 minutes.

2. Remove beans to ice water bath immediately.

3. Transfer beans to large bowl and add onions and kidney beans.

4. In a saucepan, bring sugar, vinegar, oil and salt to a simmer, add greek seasoning and pour over mixture in bowl.

5. Add balsamic vinegar and toss well.

Marinate at least one hour, or overnight in refrigerator. Toss several times and bring to room temperature, garnish with parsley and serve.

GREEK SEASONING:

1. Mix all ingredients in medium bowl and store in an airtight container up to six months.

Got to love a good three bean salad, and this one looks delicious! Nothing better than a salad like this during the springtime barbecues....really looking forward to giving it a try- thanks for posting.
