I have a pressure cooker now, in the form of an Instant Pot Duo80; details here:
https://www.amazon.com/Instant-Pot-Programmable-Pressure-Steamer/dp/B01B1VC13K Chris's opening post mentions that he tried his recipe for Carbonnade Flamande with his pressure cooker, and the results were better than ever; well, now I am going to have to see if I can cook Carbonnade in mine, in order to see how it goes. Here is my "conventional" recipe for Carbonnade Flamande, which is a very long-winded and wordy description of Chris's recipe and method: http://foodsoftheworld.activeboards.net/forum_posts.asp?TID=274&PID=40035&title=carbonnade-la-flamande#40035 My challenge will be to adapt this recipe and method to my Instant Pot. We have a roast beef on deck for this coming weekend, and I was wondering what to do with it. I might see if I can give this a go, at that time. A pressure cooker is one thing I don't have. I think I may alleviate that soon. Looks like an interesting way to cook some stuff.

Two months ago, I bought this Fissler pressure cooker, the "Vitavit Comfort".
We never bought a pressure cooker before, since I still remember when I was a kid (50+ years ago), my mother cooked often in a pressure cooker that was equipped with the loudest steam whistle from hell that scared all of us, we never ever went into the kitchen when that monster was on. That whistle went off at the least expected moments, as loud as it could, blowing a large plume of steam into the kitchen. I admit that I fell for the nice design of this Fissler but mainly that the price had temporarely gone from 249€ to 125€ for a 4,5 liter cooker! For two months it was unemployed, but a few days ago, I was planning to make "carbonades flamandes" in my usual pot, but, I finally managed to overcome my stupid fear for pressure cookers and used my still virginal one. Well, I still can't believe how much these things have changed. This Fissler produces a very light hissing, even under full pressure, no sudden violent escapes of steam blowing through a warning whistle, a real delight to work with. My carbonades flamandes were ready and delicious in half the cooking time and even more tender than before! Strangely enough, they were also much easier digestable. One thing is sure; I'm gonna use this fabulous machine regularly from now on for making stews, stocks etc. Equipped with a genious rising color indicator to monitor the pressure; Yellow: The stove can now be turned down. Green: The set temperature has been reached and the cooking time begins. Red: The temperature is too high.
