Lime & Ginger Choko Jam

2 chokos, peeled and de-seeded
2 limes, I zested them with a potato peeler, cut away the pith, then included the peel and flesh only
1 tablespoon sized knob fresh ginger, peeled
½ teaspoon salt
1 ¾ cup sugar
¾ cup water
 
Add roughly chopped chokos, limes and ginger to the food processor and blitz until finely chopped. Transfer to a non-metallic bowl and stir in the salt. Cover and leave to stand overnight.
The following day drain off any excess liquid. Place the sugar and water in a saucepan and heat until sugar has dissolved. Add the drained choko mixture to the pan and boil for 25 – 30 minutes.
 Pour into sterlised jars and seal.
Makes 900g

Sorry, what are CHOKOS exactly ?

In Manhattan English, artichokes ? I doubt it ... Artichokes do not contain seeds ...


Cucumbers ? I believe I have Heard them, called Chokes ---
